Pork Rolls with Beetroot Fries

Ingredients
For the Pork Rolls

4 slices pork neck (boneless)

2 garlic cloves, crushed

Salt and freshly ground black pepper

400 g sauerkraut

2 paprika sausages (or similar spicy smoked sausage), sliced

2 onions, finely chopped

Sunflower oil (for drizzling)
For the Beetroot Fries

600 g red beetroot
-
3 tbsp sugar
-
2 tbsp wine vinegar
-
4 sprigs fresh rosemary

Salt and pepper, to taste

Sunflower oil (for sautéing)
Instructions

Prepare the Meat
Pound pork slices to flatten. Rub each with crushed garlic, season with salt and pepper.
Top each slice with sauerkraut and sausage, then roll tightly. -
Bake the Pork Rolls
Place the rolls in a baking dish. Scatter chopped onions around them.
Drizzle with sunflower oil.
Bake at 180°C (350°F) for about 80 minutes, turning occasionally and basting with water. -
Cook the Beetroot Fries
Peel and cut beetroot into fry-shaped sticks.
Boil in salted water for 8 minutes, then drain.
Sauté in a pan with a little oil until tender and lightly golden. -
Season the Fries
Add sugar, wine vinegar, rosemary, salt, and pepper.
Simmer for a few minutes until flavors combine. -
Serve
Plate pork rolls alongside warm beetroot fries. Garnish with fresh rosemary if desired.

For added flavor, deglaze the roasting pan with a splash of white wine or stock.

Beetroot fries are also great with roast chicken or vegetarian mains.

Want it spicier? Use hot paprika sausage or add chili flakes to the beet fries.
